The Most Refreshing Water Recipe

Water…it does the body good!

Are you a fan of drinking water? Do you struggle to drink enough daily? An average person should drink half of body weight in ounces everyday. Eek…I try very hard but sometimes I fall short. How are you doing with your water intake? This is the most refreshing water I have ever tried and it definitely helps me reach my daily water intake goal!

I’m excited to share this recipe with all of you!! I absolutely LOVE cucumber lemon water. Have you tried it? If you haven’t, you should! It is so refreshing. And lemon has great benefits for digestion and your skin. So, why not?

Here is what you will need:

  • Water (of course!) 🙂
  • Lemon
  • Cucumber
  • Fresh Mint Leaves
  • Pitcher/Infuser Bottle

Now, let’s make the best water ever (imo)!

Cut your lemon and cucumber into slices about 1/4 inch thick.

Water can be so refreshing!

Next, you are going to combine these awesome ingredients to make a delicious refreshing water! The amount you need will depend on whether you are filling an Infuser Bottle or a Pitcher. In my Infuser Bottle I usually drop in 2 cucumber slices, a lemon slice, and a mint leaf. Then I repeat until the infuser basket is full! For a pitcher, I throw in four lemon slices, 6-8 cucumber slices (depending on size) and 4-6 mint leaves. Fill with filtered water and enjoy!

The Best Water Ever!!

I always dump the lemon, cucumber, and mint in my Infuser bottle at least once every 24 hours. Replace with fresh lemon, cucumber, and mint. And I try to drink the water in my pitcher within 3 days. The longer it sits the more potent in taste it becomes. After three days it is very tart…too tart for me. Also, you can use the water in your pitcher to fill your infuser bottle to get a stronger lemon taste!

That’s it! Store extra lemon and cucumbers separately in glass containers in the fridge. This is absolutely my favorite flavored water recipe. Try it and let me know what you think!

Quick & Easy Baked Chicken

Is it tough going to dinner out at a restaurant? It is for us. Read about our disastrous night out here. Even dining in is tough depending on your little one’s mood. In all honesty, having a toddler makes getting anything done throughout my day a little more challenging. For the last 21 months I have tried to figure out how to perfect this whole “stay at home” mom gig. I am so thankful that I am able to spend time with my little one but some days are a challenge! One thing I have learned is to have a routine but also be ready to fly by the seat of your pants!

Before Charis arrived I used to make all kinds of complicated dishes like Cordon Bleu, Stuffed Peppers, etc. Oh how I miss eating some of these delicious dishes. But, I don’t have time for that now. In all the chaos, I realized I need easy meals that are delicious. After all, we like to eat. If there is one thing I can’t stand it is bland meals. I need variety! Being in survival mode with a toddler means making easy meals.

Follow below and you will be on your way to making delicious baked chicken in under an hour.

Here is what you’ll need:

  • Chicken (I used chicken legs this time but have also done a whole cut up chicken)
  • Olive Oil
  • Salt or Seasoned Salt
  • Pepper
  • Baking Sheet or Casserole Dish

Ready? Here we go…

Preheat your oven to 400⁰F. If you are using a baking sheet I like to line mine with aluminum foil just because it makes clean up so much easier. I don’t know about you but I need easy these days!

Lay your chicken out on your baking sheet or in your casserole. Drizzle with olive oil. Rub the olive oil into the skin. Then sprinkle with salt & pepper to taste. I like a little kick so I use a lot of pepper. You can even try seasoned salt if you want to try something different. Once you have done one side, FLIP! And repeat.

Quick and Easy Baked Chicken

Be sure thermometer reads 180⁰F!

Bake this chicken for 45 minutes. In the meantime, cook up some delicious veggies and rice or couscous to complete the meal. Once the baked chicken finished cooking be sure to check to make sure internal temp is at 180⁰F. Enjoy!

I like this easy baked chicken recipe because it literally takes me 5 minutes to get it in the oven to bake. When chicken has about 20 minutes left of cooking, I throw some veggies on the stove. Such an easy meal so I can spend more time with my little sweet pea. She is so much fun!
